Today I decided to bake some cookies that I have been wanting to try to make ever since Laura sent me the recipe – Oreo Stuffed Chocolate Chip cookies! I’m not the biggest oreo fan but I do like them occasionally and when they have them at candy time at work they get the vanilla ones, which are even better.
She sent me the recipe from Becky Bakes – the cookies on the website came out a better shape than mine did. Plus Becky must have a nicer camera too! I guess the recipe has been making its way around the web since a coworker also mentioned that she saw it. On Becky Bakes it said that the recipe originally came from here.
Oreo Stuffed Chocolate Chip Cookies
2 sticks (1 cup) softened butter
3/4 cup packed light brown sugar
1 cup granulated sugar
2 large eggs
1 tablespoon pure vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 oz bag chocolate chips
1 pkg. Oreo cookies
Preheat oven to 350 degrees. Cream butter and sugars together with a mixer until well combined. Beat in eggs and vanilla.
In a separate bowl mix the flour, salt and baking soda. Slowly add to wet ingredients along with chocolate chips until just combined. Using a cookie scoop take one scoop of cookie dough and place on top of an Oreo Cookie. [We don’t have a cookie scoop so I just used my hands. Warning – it’s quite messy.] Take another scoop of dough and place on bottom of Oreo cookie. Seal edges together by pressing and cupping in hand until Oreo cookie is enclosed with dough. Place onto a parchment or silpat lined baking sheet and bake cookies 9-13 minutes or until golden brown. Let cool for 5 minutes before transferring to cooling rack.
Makes about 2 dozen VERY LARGE cookies. [That’s what the recipe says but I was able to make 21 stuffed cookies and a mini cookie with the leftover dough. To make only 12 they must be HUGE.]
Because they flattened out so much and got all stuck together. I decided to try to make some in a cupcake pan instead, that way it would have a nice shape.
I’m going to give most of the cookies away to coworkers – I don’t want to eat them all!
